Tropical Fruit Cup

Ingredients

  • 2 oranges, medium
  • 1/2 cup Greek yogurt, vanilla
  • 2 Tbsp crushed pineapple
  • 2 mint leaves

Directions

  1. Wash oranges and mint leaf. Pat dry.
  2. Using a butter knife, slice off the top 1/4 of each orange, making the hole big enough to scoop out the orange sections with a spoon.
  3. Scoop orange section out and onto a cutting board. Remove seeds or tough pieces of skin. Slice sections into bite-sized chunks.
  4. Combine orange sections, pineapple and yogurt in a bowl. Mix well.
  5. Fill orange cups with mixture
  6. Garnish each with a mint leaf
  7. Share with a friend and enjoy!
