Ingredients

  • 1 Tbsp. Greek yogurt, plain
  • 1 tsp tahini
  • 1 pinch of salt & pepper
  • 1 pinch of cumin
  • 1/4 fl oz of lemon juice
  • 1 whole wheat tortilla, 6 inch
  • 1/4 cup spinach, raw tightly packed
  • 1/4 cup yellow squash, sliced into 1/8 inch disks
  • 1 slice deli turkey
  • 1/4 cup tomato,diced

Directions

  1. Gather ingredients, utensils and equipment.
  2. Make the spread by combining yogurt, tahini, salt, pepper, cumin and lemon juice. Mix with a spoon until well blended.
  3. Using cutting board and butter knife, cut squash into paper thin slices and chop the tomato into small pieces.
  4. Spread yogurt mixture on tortilla, then add turkey, squash and tomato.
  5. Roll up our tortilla & take a bite.
